Vegan Chocolate Banana Bread
Vegan baking is hard. There is no way around it. However, my friend Jane (although not vegan) loves vegan treats. She always orders vegan ice cream at Molly Moons, and I knew I had to bake her something vegan for her birthday during this crazy COVID-19 time. So I went about searching for a recipe that seemed like it could be well suited for vegan-ification, that was a treat, but maybe not a dessert since I know people can be overwhelmed by receiving desserts for their birthday. and then I found it. Banana bread. Chocolate banana bread! The perfect combo of dessert-esque by being chocolate, but still a healthier and breakfast suitable/snack suitable treat. Quick breads seem forgiving due to their density so I thought I would give it a whirl.
I bought bananas and stuck them in a cabinet to let them brown for a week in anticipation of this loaf. This recipe had so many rave reviews I was very excited to try it. Now I can’t really comment on how it turned out (since I couldn’t eat it) other than I would say it resembled a banana bread/brownie hybrid. I will say it was very crumbly (which I think is due to the lack of egg in the batter to help hold it together). But Jane loved it and Mark ate it and it really does look splendid!
