Banana Bread + Cinnamon Streusel

Ruth Reichl’s banana bread. After making all the banana bread, I had 2 bananas left over. 2 bananas is tricky, most banana bread and banana muffin recipes call for at least 3 bananas, some even call for up to 7! But after going back through the runner ups to Joanne Chang’s banana bread in the Pancake Princess bake-off, I saw that one of the top rated banana breads, Ruth Reichl’s, only called for two bananas so I had to give it a shot. I wanted to add a little of my own pizzazz to the recipe though and debated between making a white chocolate macadamia nut banana bread or adding in a cinnamon streusel topping.

I opted for the streusel topping, figuring streusel makes everything better. I also think cinnamon and brown sugar really complement banana bread. The bread turned out lovely, almost more like a banana cake, which was perfectly suited for the extra special streusel topping edition. There is a good amount of sugar which leads to that nice, clearly defined, and caramelized crust around the outside. This bread was a huge hit with Mark. It was fun to personalize this recipe and add the streusel. Banana bread is a great vessel for experimenting with extra additions (chocolate chips, chocolate, frosting, nuts, streusel etc) depending on your mood!
