Classic Birthday Cake
I can’t remember the last time I made a true birthday cake from scratch. I previously made Mark cookie cakes for his birthday. Last year I made him a funfetti cake from a box in our cabin airbnb in the woods in Montana, but that’s as close as I have come.
It is Jason’s birthday and I wanted to make a birthday cake for him to celebrate the occasion. I struggled on what cake to pick, but ultimately ended up decided on a classic birthday cake. Yellow cake + chocolate buttercream frosting. I saw that Sally had just a couple weeks ago posted a recipe for “the best yellow cake I have ever had”. I debated between hers and Joanne’s recipe for this cake, but ultimately chose to follow Sally’s recipe, since I could really read about all the different variations on yellow cake she has tried and how she worked to perfect this recipe. (this is one of the reasons I love her blog!)
This cake was so light and fluffy and had amazing flavor. I made the buttercream starting with the fewest recommended amounts of sugar/cream and then kept adding and relying on Mark to be my taste tester :) Next time I would recommend starting closer to the 4 cups of powdered sugar and 4 tbls of heavy cream from the get go. This recipe was fantastic, the perfect birthday treat! Now that I own cake pans, I can’t wait to bake more cakes! Happy Birthday Jason!
