Rosemary Shortbread Cookies

Every once in a while a recipe really surprises you. I have always skipped past shortbread cookies, thinking them dry and uninteresting. I scoffed at my older sister when she would suggest shortbread, speaking of how superior other, chewy cookies are. Boy does this recipe prove that notion wrong.

I baked these cookies for my friend Aly and her family as a tribute to her father. I was drawn to them because of the presence of rosemary, which is something we attribute to Britt because he took the time to grow all the rosemary for Aly’s wedding. What I wasn’t expecting was how delicious this recipe would be.

These cookies are buttery, slightly salty and completely addicting. They are crisp and the rosemary complements the buttery, shortbread flavor perfectly. They are a perfect treat for a grown up. Slightly salty, slightly sweet, and deliciously buttery. You must make this cookie.
