Peanut Butter Cookies
A month ago I ordered Pastry Love and Flour: Spectacular Recipes from Boston's fFour Bakery + Cafe both by Joanne Chang, and am determined to work my way through many of the 300 recipes. What I love about the cookbook Flour is that it contains all the simple recipes. All the fundamentals you want to bake all the time; oatmeal raisin cookies, croissants, peanut butter cookies, cake, snickerdoodles, etc. Many cookbooks focus on more obscure, unique recipes, but this one contains perfected recipes of the basics from Joanne Chang (as well as many more unique recipes). It is a practical cookbook you can easily turn to if you already have a dessert in mind that you want to bake and simply need a recipe.
These are traditional peanut butter cookies. I let made the dough in the evening and let them chill overnight. I love that they use chunky peanut butter, as I love when peanut butter cookies have little peanut chunks in them (but I am definitely team crunchy). The dough is still very crumbly but bakes into traditional LARGE peanut butter cookies. I made like 3 dozen cookies. They are not too sweet, which makes them a yummy, addicting treat.
