Chewy Molasses Spice Cookies

I have previously talked about my love affair with molasses cookies. These cookies have the signature crinkles and crannies of a molasses cookies, but are very spice forward with a profile more reminiscent of a ginger snap. They are very soft and a little chewy. Claire notes that they are very clove forward, but that it is very balanced by all the other spices, particularly the ginger, which makes it just complement all the other spices without one in particular being too pungent.

They look very similar to my beloved ginger molasses cookie from Joanne Chang, but have a different spice profile. These cookies have more ginger, and contain black pepper, clove, and allspice compared to the recipe from Joanne Chang which contains ginger, cinnamon, and cloves. Both cookies are fantastic. Joanne Chang’s recipe is more of the classic molasses cookie I love, where this cookie is more reminiscent of a ginger snap in flavor, but elevated to be much tastier by having the chewy texture of a molasses cookie. For any ginger snap lover, these cookies are a must try!

these cookies were very easy, make a nice big batch, look beautiful, and were a lovely addition to my Christmas cookie tins this year!
