Copy-Cat Lofthouse Cookies
If you asked Mark what his favorite cookie is, the classic pink frosted lofthouse cookie from Safeway would absolutely be a top contender. Mark yearns for these cookies every time we pass them in the grocery store. He LOVES sugar cookies with sprinkles, so when I saw the Pancake Princess did a lofthouse cookie bake-off I knew I had to try the recipe!
I personally don’t like a cakey cookie, and I really don’t like the dry texture and artificial taste of lofthouse cookies (I am more of a gooey in the middle chewy cookie type of girl). What I can say is, this frosting (although nothing like the original) is VERY good! the natural flavoring from the freeze dried raspberries gives it great color and some tartness from the raspberries that is delicious!
